Cauliflower-Rice-with-Bacon-Chives-2What I love about this recipe is that it is so versatile, you will find yourself using it for breakfast, lunch, dinner and as a snack (although, not all in one day, I hope, but hey, stuff happens, right?).

The recipe is quick and simple – and if you happen to be lucky enough to find the elusive organic riced cauliflower from Trader Joe’s you will be able to whip this up in a matter of 5-10 minutes tops. But, if you haven’t been able to find it, its because people like me buy 10 bags of it when it actually is in the store. I’ll be honest too, I only got 10 because that was all they had. (Sorry, not sorry!) So, moral of the story… if you happen to stumble across that magical bag of life-saving goodness in the freezer aisle at TJ’s take everything else out of your cart and fill that sucker to the brim (not kidding, this is probably the best advice I’ve ever given – you will thank me later!).

Let’s face it, we don’t have enough time in the day as it is, so usually (…and I’ve been guilty of this myself) preparing a healthy, balanced meal can be one of the first things to get thrown to the curb. “Ugh, I had a horrible day – work sucked, I have a headache, the cat threw up on the rug again and the children need 7 different things within the next 7 seconds.. oh, and I spilled lunch all over my new shirt – Can we just order out?”. Sound familiar? Yep – Totally!

Most of you that know me well, know that I am no-nonsense and like to be as efficient as possible. That means, if I have to spend more than 3 minutes looking at, reading and preparing to make a recipe – it’s just not going to happen. Instead, I will just throw together whatever ingredients I have in the quickest (and I’m sure my husband will say messiest) way possible and hope that my family will eat it without giving me the death stare throughout dinner. So, long story short – Fill your arsenal with quick recipes like these, when you make something double the recipe so you have left-overs (or triple it if you have a house full of boys like I do), and most importantly, when you’re done – Just SIT DOWN and take a break. You deserve it! 🙂
